If you are a 90s kid, then you would surely remember relishing some Ice lollies at school or at home, while you spent summer vacations playing hide and seek with your neighbourhood friends.
So this is the adult version of that popsicle minus all the chemical colours and preservatives.
Well, this year's summer of 2020 is unlike something that any of us would have ever imagined!! Who would have dreamt of a virus that brought the entire world to a standstill, while mother nature heals herself? That's the flipside with, pollution levels being the lowest, ozone healing, birds chirping or maybe we all were lost in the noise of a super busy rat race.
While all of us hope and pray that things get better ASAP, making interesting food at home with easily available ingredients is the need of the hour.
To me, food is a happy nostalgia. This lockdown has made me cook my heart out in the kitchen more than ever with so much time at hand.
Fruits are a rarity these days, so we didn't want to waste the leftover pineapple begging to be eaten up .
INGREDIENTS :
2 Large cups of Ripe pineapples (remove the poky black skin)
3 tbsp - Honey/ Powdered sugar
2 tbsp - freshly squeezed lime juice
8-10 Fresh mint leaves.
30ml - Malibu Coconut Rum/ White rum (Optional)
PROCEDURE:
1. Place all ingredients in a blender and grind it to a juice consistency.
2. Do not strain the mixture - the fibre & pulp is what makes this popsicle healthy and yummy.
3. Pour into popsicle moulds and chill overnight.
Demould and serve!!
